Vietnamese lamb shanks with sweet potatoes - Vietnam Usulü Tatlı Patatesli Kuzu İncik




Malzemeler

- 2 yk yerfıstığı yağı (fındık yağı da kullanabilirsiniz)
- 4 parça kuzu incik
- 2 soğan (yarım ay şeklinde doğranmış)
- 2 yk ince kıyılmış taze zencefil
- 3 diş ince kıyılmış sarımsak
- 2 acı biber, ikisinin de çekirdekleri çıkarılmış, birisi ince kıyılmış diğeri uzun ince dilimlenmiş
- 1 yk + 1 çk kahverengi şeker
- 3 yıldız anason
- 200 g kadar et suyu
- 2 dal limon otu (opsiyonel)
- 1,5 yk salça
- 4 tatlı patates (soyulmuş ve büyükçe dilimlenmiş)
- 2 yk balık sosu (soya sosu da kullanılabilir)
- 1 limon suyu
- bir avuç ayıklanmış taze nane yaprakları
- bir avuç fesleğen

Ingredients

- 2 tbsp groundnut oil
- 4 lamb shanks, about 350g each
- 2 onions, halved and cut into half moons
- 2 tbsp finely chopped fresh root ginger
- 3 garlic cloves, finely sliced
- 2 red chillies, both deseeded, one chopped and one thinly sliced
- 1 tbsp soft brown sugar, plus 1 tsp
- 3 star anise
- 2 lemongrass stalks, tough outer leaves removed, then bruised
- 1.2l lamb stock
- 1½ tbsp tomato purée
- 4 sweet potatoes, peeled and cut into big chunks
- 2 tbsp fish sauce
- juice 2 limes
- big handful mint leaves, torn
- handful basil leaves

Hazırlanışı

1. Fırınınızı 160 C'de ısıtın.

2. 1 yk fındıkyağını derince bir tencerede ısıtın, incikleri baharatlayın, tencerede her tarafını 2'şer dk tutarak mühürleyin.

3. İncikleri tencereden alın. Tencereye soğanları ekleyin, 30 sn kadar kavurun, zencefil, sarımsak, kıyılmış biber ekleyin ve kavurmaya devam edin. 1 yk şekeri serpiştirin, karıştırın. Yıldız anasonları, limon otunu, et suyunu, salçayı ve baharatları ekleyin, kaynamaya bırakın.

4. Hepsini karıştın, fırına koyun ve 1,5 saat pişmeye bırakın. Sonrasında tatlı patatesleri ilave edin ve 1 saat daha etler kemiklerinden hemen ayrılabilecek kıvamda olana kadar pişirin. Balık sosunu, limon suyunu ve 1 çk şekeri ilave edin. Nane, fesleğen ve uzun dilimlenmiş biber ile süsleyerek servis yapın.
Directions

1. Heat oven to 160C/140C fan/gas 3. 

2. Heat 1 tbsp oil in a heavy-bottomed casserole, season the shanks, then brown them 2 at a time on all sides, adding the remaining oil for the second batch. 

3. Remove the lamb and add the onions. Fry them quite briskly, about 30 secs, add the ginger, garlic and chopped chilli, then turn the heat down and cook for 1 min. Add 1 tbsp sugar, stir, then add the star anise, lemongrass, stock, purée and seasoning. Bring to the boil. 

4. Cover and cook in the oven for 1½ hrs, then add the sweet potatoes and cook for 1 hr more. The lamb should be completely tender and almost falling off the bones. Stir in the fish sauce, lime juice and 1 tsp sugar to just lift the flavour, then scatter with the mint, basil and the sliced chilli to serve.
